Seafood Stew

Seafood Stew is another great way to prepare a fish dish aside from the usual fried fish, tinola or any other dish that we usually have on our tables. This Seafood Stew is also a must-try for the fish lovers out there. 

Ingredients:
  • 200 g        lean fish fillet (salmon, tuna, dorado), cut into chunks
  • 20 pcs      (150 g) shrimps, shelled
  • squid, ink sac removed then each cut crosswise into 3 pcs
  • 1 tbsp       calamansi (lemon juice)
  • 8 cloves    garlic, crushed
  • 1 medium  (50g) onion, sliced
  • 1 small      (100 g) carrot, cut into chunks
  • 1 medium  (150 g) potato, cut into chunks
  • 1 can        (227 g) DEL MONTE Tomato Sauce
  • 1 cup        water
  • 1 pc          bay leaf
  • 100 g        baguio beans (snap beans), cut into 1 1/2" long pcs



Procedure:

1. Sprinkle seafood with calamansi juice and 1 tsp. iodized fine salt (or 1 tbsp. iodized rock salt). Half fry fish then set aside.

2. Carrots and potatoes. Add DEL MONTE Tomato Sauce, water, 1 tsp. iodized fine salt (or 1 tbsp. iodized rock salt), 1/4 tsp. pepper and bay leaf, Simmer for 15 minutes.

3. Add squid, shrimps, fish and Baguio beans. Cook for another 5-10 minutes

Baked Mussels

Ingredients:

60 pcs fresh mussels (tahong)
1/4 cup Magnolia Gold Butter
2 tbsp Minced Garlic
1/4 cup all purpose flour
1/2 cup chicken stock
1 cup Magnolia Fresh Milk
salt and pepper to taste
3/4 cup Magnolia Quickmelt Cheese, grated


Procedure:

1. Steam mussels until shells open. Remove and discard empty shell and arrange on a baking tray
2. In a saucepan, melt butter and saute garlic. Add flour and mix well. Stir in stock and milk and season with salt and pepper. Remove fromt heat when mixture thickens lightly.
3. Spoon while sauce onto mussels.
4. Top with grated Magnolia Quickmelt Cheese.
5. Bake at 350°C until cheese melts. Garnish with chopped parsley.

Tahong Afritada

You will need:

1 1/2 kilos Tahong, boiled then shells removed (reserve 1/2 cup broth)
2 small (200 g) potatoes, cut into cubes then fried
4 cloves garlic, crushed
1 medium (50 g) onion, sliced
2 tsp ginger juice
1 can (227 g) Del Monte Tomato Sauce
4 tsb atsuete juice
200 g Baguio beans, cut diagonally
1 tbsp ground peanuts
1 tbsp breadcrumbs
1 medium (50 g) red bell pepper, cut into strips


Here's how:

1. Saute garlic, onion and tahong. Add ginger juice, Del Monte Tomato Sauce, tahong broth, atsuete juice, Baguio beans, salt and pepper to taste. Simmer for 5 minutes.

2. Add peanuts, breadcrumbs and bell peppers. Simmer for 5 minutes. Stir in potatoes. Serve

Fish in Pineapple-Ginger Sauce

Another exciting way to prepare a fish! Fish in Pineapple-Ginger sauce is something that I must try since I prefer eating fish more than meat. 


You'll need:
  • 3/4 kg Tilapia, filleted and cut into chunks (12 pcs)
  • 2 tbsp flour or cornstarch
  • 2 tsp grated ginger
  • 1/4 kg Singkamas (jimaca), cut into chunks
  • 2 tbsp margarine
  • 1 can (234 g) Del Monte Fresh Cut Pineapple Chunks
  • 1 tbsp cornstarch, dissolved in 1/4 cup water
  • 2 stalks green onion, cut 1" long


Procedure:

1) Sprinkle fish with 1 tsp iodized fine salt (or 1 tbsp iodized rock salt). Coat with flour or cornstarch. Fry in oil until golden brown. Set aside.

2) Saute ginger and singkamas in margarine. Add Del Monte Fresh Cut Pineapple Chunks including syrup, 1 tbsp sugar, 1/4 tsp iodized fine salt (or 3/4 tsp iodized rock salt), 2 tbsp soy sauce and dissolved cornstarch. Simmer for 5 minutes. Pour over fried fish. Top with green onions.
